Recipe – Greek Style Chickpeas

Greek-style chickpeas is an easy baked chickpeas recipe for your daily diet. A healthy and delicious snack that will have you coming back for more!

 

Ingredients:

• 2 cups dried chickpeas soaked in water overnight or 2 cans of pre-cooked chickpeas
• ½ cup olive oil
• 6 celery sticks, finely sliced
• 2 carrots, grated
• 2 red onions, finely chopped
• Bunch spring onions, finely sliced
• Large bunch parsley, chopped
• 1 rounded tsp sea salt
• Pinch freshly ground black pepper
• 1 level tsp curry powder
• 4 cloves garlic

 

To Serve:

• Lemon or lime wedges

 

Instructions:

•If using soaked chickpeas, drain and place in a saucepan. Cover with plenty of water and cook for about 2 hours until tender. Using a pressure cooker will reduce the cooking time significantly. Drain and reserve 2 cups of the cooking liquid.
• Preheat the oven to 200C/Gas6.
• Mix the chickpeas with the rest of the ingredients. Add the reserved cooking liquid.
• Transfer into a baking dish. Bake for about 30 minutes or until the chickpeas are golden and the liquid is bubbling.
• Serve with lemon or lime wedges. Serve hot or at room temperature.

 

Other Notes:

• Serves 6 – 8 Greek-style chickpeas.
• The chickpeas will last for up to 3 days in a closed container in the fridge.
